Crafted by the Martelli family in their historic pasta workshop inside the Castello di Lari in the heart of the Pisa hills, Martelli Penne are the result of centuries-old artisanal tradition. Made by slowly kneading the finest durum wheat semolina with cold water, the pasta is bronze-drawn to achieve a rough texture and then slowly dried at low temperatures (33–36°C) for around 50 hours, depending on atmospheric conditions.
Unlike most penne, Martelli’s are smooth rather than ridged. The traditional bronze-drawing technique ensures they hold sauces perfectly without the need for rigature, while maintaining uniform thickness and a delicate bite. Their porosity and flavour make them ideal for absorbing any sauce, whether a rich ragu, a light olive oil dressing, or a simple sprinkle of cheese. Every bite delivers the unmistakable taste of genuine artisan pasta.
