Only the largest anchovies caught in spring along the Amalfi Coast are selected for Armatore Cetara’s artisanal fillets. These anchovies are matured in traditional chestnut barrels for at least 8 months, following a time-honoured method passed down through generations.
Once appropriately aged, the fish are carefully cleaned, filleted, and preserved in premium olive oil, locking in their delicate, briny flavour and maintaining impeccable texture. This Mediterranean delicacy is ideal for gourmet appetisers, pizza, pasta dishes, or simply enjoyed with crusty bread with burrata.
